ZAMBIAN STYLE CHICKEN STEW

Chicken stew is commonly eaten across Zambia and trust me when I say that Zambian style chicken stew has a distinct taste and will have you salivating for more and more.

INGREDIENTS

  • Chicken pieces

  • Tomato

  • Onions

  • Garlic

  • Black pepper

  • Chicken spice

  • Chicken stock powder

COOKING AND PREPARATION

  1. Add your chicken to a pot of boiling water. Season with salt and black pepper.

  2. Leave the chicken to boil for about 10-15 minutes.

  3. Transfer the homemade chicken broth to a bowl and save for later.

  4. Season your boiled chicken with black pepper, salt to taste and chicken spice.

  5. Add oil to the same pot and fry off your chicken pieces until browned.

  6. As you fry, pour in some of the broth you saved slowly to allow for more flavor.

  7. While your chicken is frying, chop up some onions and garlic.

  8. Add your onions and garlic to your chicken and fry until fragrant.

  9. Add more of the broth and leave to simmer for about 20 minutes or until the broth reduces. Save some broth for later.

  10. Chop up or grate some tomatoes and mix with chicken stock powder (about 2 tspns).

  11. Add your tomato and the remaining homemade broth to the chicken and leave to cook for another 15 minutes or until the chicken is cooked and the sauce thickens.

  12. Serve with nshima and vegetables of your choice.
