TOMATO & CUCUMBER BRUSCHETTA

Bruschetta is an appetizer from Italy. This appetizer consists of grilled or toasted bread that is usually rubbed with garlic and topped with olive oil and salt. There are many variations of this dish. This is one of my variants and I love it so much. Try out the recipe now and add your own toppings including tomato, beans, cured meat, or cheese.

INGREDIENTS
Tomato
Cucumber
Bread
Cheese (Mozzarella or Cheddar)
Garlic
Salt & pepper
PREPARATION
Preheat oven to 190•C
Mince your garlic and spread it on each slice of bread. Alternatively you could rub a sliced garlic clove on the bread. This gives it a nice garlic flavor but without the actual garlic pieces.
Add cheese to your bread. You can add as much as you want.
Put the bread in the oven until the cheese has melted and the bread is nice and toasted.
Slice your tomato and cucumber and season with salt and pepper.
Remove your bread from the oven and and your cucumber and tomatoes on top of each slice.
Garnish with parsley and more cheese.
