.....and a French Bird braised in Red Win”

Did someone say elegant dessert? This one is special to me because it’s one of those desserts you only get to see on a menu in a fancy restaurant. Well not anymore, we’re bringing it straight to your home kitchen all the way from France.
Fine dining in the comfort of your home. This is definitely one for the holidays because you can easily throw everything in a pot and viola, everyone is happy. If you don’t try this out then you’re missing out on some delicious food.
For this one I used the Nederburg Pinotange Wine and it was am-azing. The reason I chose this particular wine is because of its Rich fruit flavors and strong aftertaste that leaves you searching for more. It’s the perfect wine for this dessert.
Ingredients
Sugar
Whole cloves
Oranges
Red Wine
Orange juice
Vanilla essence
Pears
Measurements
½ cup sugar
8 whole cloves
1 stick cinnamon
2 cups Nederburg Pinotage
½ orange juice
2 tsp vanilla extract
These measurements are simply a guide and can be adjusted.
Cooking and Preparations
In a saucepan, add all your ingredients minus the pears.
Bring to a simmer on medium heat
Once the liquid starts bubbling, reduce the heat to low and peel your pears.
Add your peeled pears to the liquid. Make sure they are standing.
Increase the heat to a medium heat and leave the pears to cook for 30 minutes.
Make sure you turn the pears during the cook so that each side cooks and acquires the red wine color.
Once cooked, remove your pears and place them on a plate. Make sure they are standing.
Strain the liquid into another saucepan and put it back on the stove to reduce.
Your liquid should turn into a sauce that you can pour over the pears. Leave the sauce to cool.
Serve cool or chilled with custard, ice cream of whipped cream.
