LEMON CHICKEN & POTATO BAKE

Growing up ‘Chicken & Chips’ was a favorite. I honestly used to have it on a daily basis. Here’s a new take on your childhood favorite meal, plus it’s much much healthier, because anything that goes in the oven and uses olive oil is healthy, wink wink!

INGREDIENTS

  • Chicken pieces

  • Salt

  • Pepper

  • Lemons

  • Olive oil

  • Thyme

  • Parsley

  • Oregano

  • Garlic

  • Potato spice


COOKING AND PREPARATION

  1. Preheat oven to 200•C

  2. Wash your chicken and remove any excess fat and unwanted skin.

  3. Season with salt and pepper, thyme, oregano and parsley.

  4. Wash and cut your potatoes into wedges and season with potato spice.

  5. Lind your baking tray with baking paper.

  6. Add your potatoes and chicken to the baking tray.

  7. Add chopped garlic. The more garlic the better.

  8. Squeeze a whole lemon over everything and add lemon slices or wedges.

  9. Bake for 90 minutes or until the chicken is cooked through.

  10. Squeeze a lemon wedge over the dish and serve.
