LEMON CHICKEN CURRY

INGREDIENTS
Chicken pieces
Fresh lemons
Yellow onion
Fresh garlic
Fresh ginger
Paprika
Curry powder
Turmeric
Zamor Black pepper
Zamor lemongrass
Tomato’s
Coconut milk
Salt
Bay leaves
Tomato sauce
Chili (optional)
Cooking and Preparation
Wash your chicken pieces thoroughly. Pat dry with a paper towel.
Season your chicken with all your spices and curries in a bowl. Rub until all pieces are coated well. Set aside in the fridge
Chop your garlic, ginger and onion.
Add butter to a pan and let melt.
Once butter has melted add your onion, ginger and garlic. Fry until fragrant. Fry for about 3-5 minutes.
Once your vegetables are translucent and fragrant, add your chicken and fry. Fry for about 10 minutes.
You want to fry your chicken until a beautiful dark brown crust forms on the chicken.
Once your chicken has fried off, add some bay leaves, crushed tomatoes and tomato sauce. Leave to simmer for about 10 minutes or until you notice a color change.
At this point add in your coconut milk and leave to simmer for 15 minutes. Check on it and stir regularly.
Serve with plain rice or naan!
