KETO BEEF TACOS WITH PINEAPPLE SALSA

INGREDIENTS

  • White Cheddar cheese

  • Olive oil

  • Onions

  • Garlic

  • Beef mince

  • Paprika

  • Cumin

  • Kosher salt

  • Black pepper

  • Mixed herbs

  • Tomatoes

  • Sour cream

  • Pineapples

  • Cilantro


Cooking and Preparation

  1. Season your mince with all your spices and set aside.

  2. Add olive oil to your pan on medium heat.

  3. Once your oil is hot, add your seasoned mince and fry until slightly browned.

  4. Add your chopped onions and garlic and continue to fry until onions are translucent.

  5. Toss in some crushed tomatoes and continue to cook until everything comes together. You can adjust flavors as you cook.

  6. Pre heat your oven to 200°

  7. Like a baking tray with foil or parchment paper.

  8. Once you grate your cheese, dot about a handful of cheese onto the tray. Make sure there is enough space between them as this will melt to make a taco cheese circle.

  9. Bake for about 5 minutes

  10. Remove from the oven and gently transfer each cheese circle to the bottom of a muffin tray and leave to cool.

  11. While cooling, make your pineapple salsa.

  12. To a small bowl, add diced pineapples, chopped cilantro, red onions and tomatoes. Mix everything well. To add extra flavor season with salt and pepper and squeeze one lime wedge.

  13. Construct your taco by add beef to the center of your taco followed by your pineapple salsa and sour cream.
