HERB CRUSTED ROAST BEEF

Roast beef is one of those meals that takes you straight to a perfect Sunday afternoon with family. It’s one of this easy to make recipes but leaves you gobsmacked due to the depth of flavor.


The perfect cut of been for this meal is definitely a tenderloin. This is the most tender cut of the animal and is perfect or a slow roast. The loin comes out juicy and moist. Roast beef flavors and ingredients can be adjusted to suit your desired taste which is what makes it a wonderful meal to try out.


PREP TIME: 9 hours

COOK TIME: 2 hours

INGREDIENTS

  • Beef fillet

  • Rosemary

  • Thyme

  • Olive oil

  • Black pepper

  • Salt

  • Garlic

  • Potatoes

  • Carrots

  • Green beans

  • Green bell peppers

  • Potato spice

  • Butter



COOKING AND PREPARATION

  1. Wash your fillet and make sure you leave the kitchen string on.

  2. Place your beef in a large bowl.

  3. In a bowl add olive oil, thyme, rosemary, garlic, salt and pepper. Mix well.

  4. Pour your herb mixture over they beef and make sure every part of the beef is covered.

  5. Cover with plastic wrap and leave in the fridge for 8 hours or overnight

  6. Once the beef has sat in the fridge for 8 hours, chop up your vegetables and season with potato spice. Add your vegetables to a roasting tray.

  7. Preheat your oven to 190•C.

  8. Add your beef to the roasting pan with your vegetables and make sure you pour all your marinade.

  9. Add some butter and cover with foil. Cool for 30 minutes then remove the foil.

  10. Roast for another 1 hour 30 minutes for a perfect medium well.

  11. Remove from the oven and let the beef rest for 5 minutes before slicing it. This will ensure all the juices are trapped in the meat.
