BRAISED LAMB SHANK IN SWEET & SOUR SAUCE.

Lamb shank is a tough cut of meat. Because of this a long and slow cook is required. Because lamb is a type of meat with a lot of fat, the long cook time breaks down the fats and leaves the meats so tender and juicy.


This recipe is the perfect combination of sweet, sour and tangy. The slow cooking process brings out all the wonderful flavors of the lamb.


Ingredients

  • Lamb shank

  • Tomato paste

  • Chicken stock

  • Beef stock

  • Brown sugar

  • Thyme

  • Rosemary

  • Onions

  • Garlic

  • Carrots

  • Flour

  • Salt

  • Black pepper

Cooking & Preparation

  1. Preheat oven to 190•C

  2. Wash your lamb and trim off any excess fat.

  3. Season your lamb with rosemary, thyme as well as salt and pepper. Set aside.

  4. Chop up your vegetables and add them to your preferred baking dish.

  5. In a bowl, add your beef and chicken stock, brown sugar, flour and tomato paste. You can taste and adjust accordingly.

  6. Place your lamb on top of your vegetables.

  7. Pour your stock over the lamb and cover with foil/aluminum wrap.

  8. Bake for 3 hours and uncover after an hour and a half.

  9. Serve with mashed potatoes, rice or steamed bread.
